CAMPER'S STEW
2 tbsp. oil or margarine
2 lbs. ground beef
1 medium to large onion
1 pkg. beef bouillon or cube
1 can old-fashioned or chunky vegetable soup
1 (28 oz) can tomatoes
2 to 3 cans (16 oz. each) Veg-All (mixed vegetables)
1/2 cup rice or macaroni (shells, dilanti, alphabets), optional
Melt margarine in large Dutch oven. Brown ground beef and add onion just before beef is done so it can brown.
When onion is translucent add the rest of the ingredients (except macaroni or rice). Let simmer for 15 minutes.
Add last ingredients. Let simmer until rice or macaroni is tender.
Serve in large soup bowls.
This recipe can be reduced or added to easily depending on how many you are feeding. Best if cooked over open fire in a Dutch oven, but can be done stove top. Best served with salad.
Servings: 6

Hi Nosphaer,
I haven't tried this recipe, but it looks pretty flexible. To make a thicker mixture, I would try adding more than the 1/2 cup rice or macaroni and then adjust the liquids as needed as it cooks.
Happy Cooking!
