Cantaloupe Peach Preserves
4 cups of cantaloupe peeled
2 cups of peaches
5 cups sugar
2 Tbsp. lemon juice
Wash and cut firm, ripe melon in l inch slices crosswise. Remove rind and seeds. Cut slices into even pieces. Peel, pit and slice peaches. Mix fruit with sugar. Add lemon juice. Boil until fruit is clear. simmer until thick, about l hour stirring occasionally so it doesn't scorch.
Pour hot mixture into hot strerilized jars. Cool, then seal. Store in refrigerator.
I just found this recipe yesterday I don't remember where from off the internet. I cooked my fruit for a while stirring it until there was a syrupy mixture. Then I ran it through the blender. Then put it in the jars and water bathed it. This morning it looked a little watery chunky .But I know yesteday when I tried it after I filled the jars..its tasted divine. I can't describe it either. With the fruit used in it. It was just great.
I have not made just straight cantaloupe canned. But I have frozen it with a light syrup on it. It tasted fairly good when removed from the freezer you could tell a difference in taste.
