Recipe(tried): Cape Cod Portugese Kale Soup

Dear Wolf singleton - Below is the most authentic Kale soup I've had - we have spent summers on Cape Cod for years, and have sampled all the many restaurant's versions - this recipe was given to me by a Portuguese woman who lives out near Provincetown, and it's by far the best, better than the restaurants! And comparatively easy, too. I have even done it in a crockpot but I think a large pot bubbling away on the stove is the best way. Enjoy!

CAPE COD PORTUGUESE KALE SOUP

1 cup dry red kidney beans (soaked overnight in cold water)
5 cans (13 1/2 oz each) beef broth plus 2 cups water
1 lb kale, broken up into small pieces
1 large onion, diced coarsely
1/2 lb chorico sausage, skinned and broken up
1/2 lb linquica sausage, sliced into small rounds
1 Tbsp. red wine or balsamic vinegar
1 tsp. Pepper
1/2 tsp salt (optional - broth is very salty, as is sausage)
as needed: 1 to 2 cups more water while cooking
2 cups cubed potatoes
1 or 2 cups water

Soak beans overnight in cold water.

In morning, drain beans.

In large pot, add beans, onions, sausage, kale, salt/pepper, vinegar, beef broth and 2 cups of the water. Bring to boil. Reduce heat, cook gently for 3 hours.

Add potatoes and 1 or 2 cups more water. Continue cooking until potatoes are tender.
