Red wine or balsamic vinegar - q

There certainly are as many Kale soup recipes as there are Portugese cooks!

In my recipe, the red wine or the vinegar (whichever one you use) is such a tiny amount (1 Tbsp.) that I have often wondered just what that tiny amount could do to such a large recipe?

Any ideas? I've always put it in, but I wonder if it would make any noticeable difference if you left it out.
