Recipe: CAPE TIPSY TART?

This might be what you are looking for? Julie C. (from South Africa) posted on
April 20, 1999. It is similar to Sticky Toffee/Date Pudding, except this has
nuts in it. I have saved this in my file and plan to try it out this winter
myself. If not, she might be able to help you out!

CAPE TIPSY TART

250g dates,stoned and finely chopped
5 ml (1tsp)bicarb of soda
250 ml(1cup)boiling water
125m(1/2cup)butter
250ml(1cup)sugar
2 eggs beaten
500g cake flour
5ml(1tsp)baking powder
2ml(1/2tsp)salt
250ml(1cup)walnuts or pecans,finely chopped
SAUCE

250ml (icup)sugar
15ml (1Tbls)butter
150ml water
5ml(1tsp)vanilla essence
pinch salt
125ml(1/2cup)brandy

Divide dates into 2 bowls ,add bicarb to 1 andpour boiling water over,leave
to cool.
Cream butter and sugar together and add eggs,beat well.Sift flour,b/powder and
salt and fold into creamed mixture.Add dry portion of dates and nuts and mix
well to combine..Stir in cooled bicarb and date mixture andpour into a greased
baking dish(large)and bake in a pre-heated oven 180c(350f) for about 40 mins
For sauce.........
Heat sugar,butter and water together in a pan for 5 mins.Remove from heat and
add vanilla,salt and brandy.
Pour sauce over pudding as soon as you take it out of the oven and serve hot(my
preference!!!!!!)or cold with thick cream.
Definately a winter pud and totally deliciuos.....but don,t count the
calories!!!!!
