Carolyn's Famous Chili
I had to get my kid's permission to post this recipe, I wasn't sure if they wanted it to be a family secret or not!
serves 6
1 1/2 lbs ground beef (lean)
2 onions
1 zucchini
2 peppers (I use yellow/red/orange/green, whatever I can find, though usually not green because I already have a zuke in there)
garlic (a few cloves)
1 (28 oz) tin of diced tomatoes
2 tins tomato soup
2 tins of beans (I usually use one tin of kidney beans, rinsed, and one tin of Libby's tomato sauce baked beans)
2 tbsp. chili powder or to taste (the one I use is very good quality from one of those chi-chi gourmet food stores, and is excellent! I use 2 TBS of it, and it has a nice amount of heat. You may have to improvise here... maybe a little cumin along with the chili powder, some more cayenne for the heat?)
1. Brown the beef, and spoon off all the extra
fat.
2. While the beef is browning, cut up all the veggies into chunks.
3. Add veggies to browned beef, starting with the onions, ending with the garlic.
4. After all the veggies have been saute (stir-fried lightly), put in the chili powder and whatever other spices you wish, to taste; after a couple of minutes, add the tomatoes, cook and stir them into the mix for a couple of minutes.
5. Now add the rest: tomato soup and beans.
6. Cook the chili for at least half an hour, to heat and incorporate all the flavours together.
