Recipe(tried): Carolyn's Yummy Meatballs
Misc.Tonight we are having a family favourite I have not served in a while. I created this recipe, based on a frozen dinner we used to be able to find, but no longer can. Where I usually use rice, today I will be using breadcrumbs. I would prefer the rice, but don't have any already prepared. So I will be subbing some breadcrumbs.
Yummy Meatball's:
1 lb lean ground beef or sirloin
1/3 pound ground pork
1 package Lipton's onion soup mix
1 egg
1/2 cup cooked rice, or breadcrumbs
2 or 3 bell peppers, different colours
1/2 tin tomato soup (condensed)
1/2 large (28 oz) tin diced tomatoes
Mix together first five ingredients, form into large-ish meatballs, and make a single layer of them in an 8X11 pan.
Prep and thinly slice peppers, sprinkle them over top of the meatballs.
Mix together the soup and tomatoes, and pour over the other mixture in the pan.
Cover with aluminum foil and bake at 350 for 1 hour.
We serve this on egg noodles.

p.s. sometimes I double this and bake them both...one to eat right away, and the other to freeze.
