CASA BLANCA BUTTERMILK PIE
1 cup sugar
3 tbsp. flour
1/2 tsp. salt
3 eggs, separated
2 cups buttermilk
1/4 cup butter, melted and cooled (room temp.)
1/4 tsp. cream of tartar
1 unbaked (9-inch) pie shell
Mix sugar, flour and salt together; set aside.
Beat egg yolks slightly; stir in buttermilk and melted butter. Add dry ingredients, stirring to blend; set aside.
Beat egg whites until foamy. Add cream of tartar; beat until stiff. Fold into buttermilk mixture. Pour into pie shell.
Bake at 375 degrees F for 45 minutes or until set.
