Recipe: Good and Spicy Meatballs with Spicy Sauce (using corn flakes, Kellogg's, 1970's)
Main Dishes - Beef and Other MeatsGOOD AND SPICY MEATBALLS
2 cups Kellogg's Corn Flakes (or 1/2 cup Kellogg's Corn Flake Crumbs)
1 pound ground beef
2 tablespoons catsup
2/3 cup nonfat dry milk powder
1 teaspoon salt
1/8 teaspoon ground black pepper
1 egg
1/4 cup grated onion
1/4 cup water
Spicy Sauce (recipe follows)
Hot cooked rice (for serving)
If using corn flakes, crush into fine crumbs; place in mixing bowl. Add remaining ingredients; mix thoroughly. Using level measuring-tablespoon, shape into 48 or 50 meatballs. Place in single layer in foil-lined shallow baking pan.
Bake in moderately hot oven (400 degrees F) about 12 minutes or until browned.
Meanwhile make Spicy Sauce. Add meatballs to sauce. Serve as a main dish with rice.
SPICY SAUCE
2 tablespoons pickle relish
1/4 cup catsup
1 (8 oz.) can (1 cup) tomato sauce
2 tablespoons chopped onion
2 tablespoons brown sugar
1/8 teaspoon ground black pepper
1 tablespoon vinegar
1 tablespoon Worcestershire sauce
1/4 cup water
Combine ingredients for the Spicy Sauce in 3-quart saucepan; simmer over moderate heat about 15 minutes, stirring frequently. Add meatballs and keep hot until serving time.
Makes 6 servings
