Hi Mickey,
This is the recipe I have for Chapch'ae. I've only eaten it with beef... I imagine you could substitute chicken strips.
Chapch'ae (Korea)
Serves 4-6
4 teaspoons oil
1 clove garlic, minced
1 slice ginger, crushed
1/2 pound flank steak, sliced in thin strips
1/2 pound green beans, cut julienne
2 carrots, cut julienne
1 onion, cut in half and sliced julienne
2 ribs celery, thinly sliced diagonally
6 dried shiitake mushrooms, soaked until softened and cut julienne
3 ounces bean thread noodles, soaked 15 minutes
1-1/2 tablespoons soy sauce
1 teaspoon sesame oil
2 teaspoons sesame seeds, toasted
In a large skillet, heat 2 teaspoons oil and stir-fry garlic and ginger until fragrant. Add beef and stir-fry until cooked through. Remove. Discard ginger.
Heat 2 teaspoons more oil. Stir-fry vegetables until crisp-tender.
Add drained noodles and stir-fry until translucent.
Return beef to the pan. Add soy sauce and stir-fry briefly. Stir in sesame oil. Sprinkle with sesame seeds.
Serve hot or at room temperature.
