Cheese Chowder

1/2 cup chopped carrots
1/4 cup chopped celery
1/4 cup chopped onion
2 T. butter
1/2 cup flour
2 cups milk
1 1/2 cups chicken broth
Dash of paprika
1 1/2 cups shredded American or cheddar cheese

Combine carrots, celery, onion and butter. Cook over low heat, covered, until veggies are tender. Add flour to milk and chicken broth, stirring until smooth. Add to cooked vegetables. Sprinkle in paprika, if desired. Cook and stir until thickened and bubbling. Stir in cheese, until melted. Do not boil.
