Cheesy Dressed Cabbage
1/2 lb.Bacon
1 head green cabbage, cored and shredded
4 yellow onions,sliced very thin
2 Tablespoons garlic,minced
1/2 cup dry white wine[optional]
4 green onions,finely minced
8 oz cream cheese, softened
Kosher salt and fresh black pepper,to taste
In a dutch oven, cook bacon until crisp.Add shredded cabbage and sliced onions.Cook over medium hight heat heat until softened and mixture is reduced by half.Add garlic[and white wine if desired] and continue to cook until mixture begins to brown and is reduced by half again. Add greenonions and cream cheese, stirring untill cream cheese is fully melted.Season with salt and pepper to taste.
Serve warm.
Tips on cabbage:
Choose a cabbage with fresh crip looking leaves that are firmly packed; the head should be heavy for it's size. Tightly wrapped cabbage may be refrigerated for about a week. Gabbage is a great source of vitamin C.
So hope you enjoy St. Patrick's Day no matter what you cook. Joannia
