Recipe(tried): Cheesy Mashed Potatoes, Swiss Creamed Peas - Side Dishes for Coca-cola Pork Chops
Menus I tried Rhonda's recipe for the Coca-Cola Pork Chops last night for supper. Except for my son not liking the mushrooms in the sauce, they were thumbs up. For side dishes, I made Cheesy mashed potatoes and Swiss creamed peas. For dessert, we had fresh Bing cherries.
CHEESY MASHED POTATOES
8 servings
8 med potatoes (2-1/2 lbs)
1 (8 oz.) pkg cream cheese, softened
1 (8 oz.) carton sour cream
1/2 cup butter or margarine
1/4 tsp garlic powder
1/4 tsp pepper
4 oz shredded cheddar cheese
Peel and quarter potatoes, cook in enough water to cover, for 20-25 minutes or till tender. Drain off liquid. Add rest of ingredients except cheddar cheese and beat mixture with electric mixer till fluffy. Turn mixture into a buttered 2 qt casserole or baking dish. Top with the cheddar cheese. Cover and bake at 350 degrees for 45 minutes. Uncover and bake for 15 minutes more.
This is a great alternative to mashed potatoes and they stay hot longer.
SWISS CREAMED PEAS
Serves 4
1 pkg (10 oz) frozen peas (2 cups)
2/3 cups sliced green onions
1 tbsp. margarine or butter
2 tsp. flour
dash salt
2/3 cup half & half
1/4 tsp. finely shredded lemon rind
1/2 cup (2 oz) shredded process Swiss Cheese
In a saucepan, cook peas according to package directions. Drain well, set aside. Meanwhile, in a medium saucepan, cook green onions in hot margarine till tender but not brown. Stir in flour and salt. Add cream and lemon rind all at once. Cook and stir till thickened and bubbly. Cook and stir 1 minute more. Add cheese, stirring till melted (do not boil). Return peas to saucepan. Add cheese sauce and stir to coat.
Note - I microwaved the peas in a 1-1/2 qt. Corningware casserole, drained the peas and then added the sauce. It saved cleaning an extra pan.
