Recipe: Cheesy Spinach Bake

While searching for Betty's request Quiche recipe from Taste of Home, (which I unfortunately did not find), I came across this yummy sounding casserole. I plan to try it soon, probably substituting steamed fresh spinach for the canned and egg beaters for the eggs.

CHEESY SPINACH BAKE
1 can (16 oz.) spinach
4 eggs, beaten
1 cup milk
1 cup shredded Swiss cheese
1 cup cubed firm white bread
1/2 cup sliced green onions
1/4 cup grated Parmesan cheese

Preheat oven to 375. Drain spinach squeezing out excess liquid. Combine all ingredients and pour into a 1 qt. baking dish. Cover and bake at 375 degrees F, 25-30 minutes or until set.
