Recipe: Carolina Corn (using milk, eggs and bacon, stove-top)

CAROLINA CORN

6 strips bacon
3 to 4 eggs, slightly beaten
1/2 cup milk
2 cups fresh corn kernels (or canned whole-kernel corn, drained)
2 tablespoons bacon fat
1/8 teaspoon pepper

Cook bacon to a delicate brown in heavy saucepan. Remove from fat, and cut in small pieces.

To slightly beaten eggs, add milk, corn, bacon, and bacon fat. Cook over medium heat, stirring constantly until set. Add pepper and salt, if necessary.
