Recipe(tried): Cherry Coke Salad - RE: Coca Cola Salad

Very interesting... Even though the recipe I use is titled "Cherry Coke Salad", I make it for Christmas Eve dinner each year! I guess it should be called "Christmas Salad"... haha.

My recipe calls for 1 1/4 cups LESS liquid than yours, although mine uses a larger can of pineapple, with presumably more juice. That still wouldn't account for a full 1 1/4 cups more liquid. I would feel uncomfortable adding that much more because it seems it might not gel solidly that way, especially if a molded salad is preferred to one in a dish.

CHERRY COKE SALAD

1 (16 oz) can tart red cherries
1/2 cup water
1/2 cup sugar
1 (6 oz) or 2 (3 oz each) pkgs. cherry gelatin
1 (20 oz) can crushed pineapple with juice, undrained
1 cup chopped pecans
1 cup (8 oz) Coca Cola, at room temperature

Drain cherry juice into saucepan; reserve cherries. Add water and sugar to juice and bring to a boil. Remove from eat.

Stir in gelatin, pineapple, cherries, pecans, and Cola. Pour into dish or mold and chill until set.
