Recipe(tried): Cherry Tomato Parmesan

This recipe was first posted by Cheesehead. I tried it last night. DH and I both liked it. It was very quick and easy to put together. We had it with Spiedi Chicken Sandwiches, grilled fresh corn on the cob and fruit salad. Thank you Cheesehead :-)

Cherry Tomato Parmesan

1/4 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 Tbsp. olive oil
1/4 tsp. coarsely ground black pepper
1 garlic clove, crushed
2 pints red and/or yellow cherry tomtatoes
2 Tbsp. chopped fresh parsley

Preheat oven to 425 degrees F.

In a small bowl, combine breadcrumbs, Parmesan cheese, olive oil pepper, and garlic.

Place cherry tomatoes in shallow 1 1/2 quart casserole or 9 1/2 inch deep-dish pie plate. Top with breadcrumb mixture; sprinkle with parsley.

Bake 20 minutes or until tomatoes are heated through and crumbs are browned.
