CURRIED ONION CASSEROLE
5 thinly sliced medium onions
1 cup water
3 tbsp butter or margarine, melted
2 tbsp flour
2 tsp beef flavored bouillon granules
1 tsp curry powder
1 cup milk
1/2 cup (2 oz) shredded Cheddar cheese, divided
Preheat oven to 325 degrees F. Grease a 2-quart casserole.
Combine onion and water in a large skillet. Bring to a boil. Cover and reduce heat; simmer until onions are tender. Drain and transfer onions to prepared casserole.
Melt butter in a heavy saucepan over low heat; add flour, bouillon granules, and curry powder, stirring until smooth. Cook 1 minute, stirring constantly.
Gradually add milk; cook over medium heat, stirring constantly until mixture is thickened and bubbly.
Add 1/4 cup cheese, stirring until cheese melts. Pour sauce over onions in casserole. Top with remaining cheese.
Bake at 325 degrees F for 30 minutes. Serve immediately.
