Recipe: Chicken a'la Nancy (using white wine, mushrooms and artichoke hearts)

CHICKEN A'LA NANCY

1/4 cup vegetable oil
1/2 lb. fresh mushrooms, sliced
1/2 lemon, yellow rind only, very thinly sliced
1 clove garlic, minced
2 boneless, skinless chicken breasts, pounded 1/4-inch thick, cut into 2-inch squares
1/2 cup dry white wine
1 tbsp. flour
1 tsp. salt
1/4 tsp. ground black pepper
1/4 tsp. oregano
1 (14 oz.) can water-packed whole artichoke hearts, drained and quartered

In a large skillet over medium heat, warm oil. Saute mushrooms, lemon and garlic until tender.

Add chicken, wine, flour, salt, pepper and oregano. Cook, stirring frequently until chicken is tender, about 15 minutes.

Add artichokes; toss with chicken until heated through.
