Recipe(tried): Chicken and Apple Casserole

Hello Everyone,
its been a busy start to the week for me!I,m still spring cleaning and I,m amazed by the amount of junk I accumalate!!I must be the original Packrat!I,ve also found thing,s I thought I,de lost forever!On to food here is last nights supper.......

I really fanced a good old fashioned casserole so this is what I made..

AROMATIC CHICKEN, CABBAGE & APPLE

10 chicken drumsticks
1/2 tsp caraway seed
1 tsp cumin
1 tsp ground coriander
2 tsp salt
2 tbsp finely chopped fresh ginger
4 medium potatoes, peeled , quartered and cut into eighths
4 wedges of cabbage(red or white)
3 Golden Delicious apples, peeled and cut into wedges
2 onions, peeled and quartered
6-8 carrots, peeled and sliced diagonally
6-8 fragrant bay leaves
2 shards cinnamon
1 Tbls mild apple cider vinegar (optional)
1 cup freshly squeezed orange juice
1 tbsp olive oil

Serves 6

Wash chicken and pat dry, using paper towels. Blend spices, salt and ginger together. Peel back skin of drumsticks, pat flesh with spice mixture and replace skin.
Line casserole dish with potatoes, then cover with drumsticks.
Intersperse with rows of cabbage, apples, onions and carrots.
Sprinkle extra spices and bay leaves over, tuck cinnamon chards in between vegetables and sprinkle with vinegar, orange juice and olive oil.
Cover tightly and braise at 160 C for 1 hour. Remove lid or aluminium foil and continue braising until golden brown.

Broccoli and Bacon Bake

Serves:6 2 tsp butter
i clove garlic minced
1 large onion, chopped
1/4 lb bacon, chopped
12 ozs broccoli, cooked
1 1/2 cups cheese sauce(recipe below)

Cheese sauce

3 tbls butter
3 Tbls flour
1 1/2 cups milk
salt and pepper, to taste
pinch nutmeg
1/2 cup Cheddar cheese, grated
Saut the onion and garlic in the heated butter until soft. Remove from pan and set aside. Place chopped bacon in pan and fry until crisp. Grease an ovenproof dish and layer the onion, garlic, broccoli and bacon. Cover with the cheese sauce and bake at 180 C for 20-25 minutes or until golden brown.

Cheese Sauce

Prepare a white sauce with the butter, flour and milk. Season to taste and add the cheese. Dessert was..............

Treacle Pudding
********************4 oz. softened butter
4 oz. castor sugar
2 eggs
4 oz. self raising flour
pinch salt
4 tablespoons Golden Syrup

Sauce.
********
4 tablespoons Golden Syrup
2 tablespoons water

Butter a 1 pint pudding basin. Cream the butter & sugar in a bowl until soft & fluffy. Add eggs one at a time, adding in a little flour with the second egg to prevent curdling. Fold in the flour & salt, lightly. If the mixture is too dry add a little milk. Spoon the syrup into the bottom of the bowl then add the pudding mixture. Cover with a sheet of buttered foil and bake at 375 F for 35-40 minutes.
Put second lot of syrup in small pan with water and heat ready to pour over pudding when you turn it out onto a plate.

I did,t have the pud but the children loved it as I,m cutting down I nibbled on an apple!!!
