Recipe: Chicken and Cortland Apple Couscous (with raisins and almonds)
Main Dishes - Chicken, PoultryCHICKEN AND CORTLAND APPLE COUSCOUS
4 boneless, skinless chicken breast halves, cooked and chopped
2 cups couscous, uncooked
2 1/2 cups boiling chicken broth
2 apples, peeled and chopped
1/2 cup golden raisins
1/2 cup slivered almonds, toasted
1/4 cup unsalted butter
1/2 tsp ground coriander
1/4 tsp ground cinnamon
1/8 tsp ground cloves
Preheat oven to 400 degrees F.
Combine all ingredients in a 9x13x2 inch glass baking pan.
Cover with foil and bake for 25 minutes.
Servings: 8
