SUMMER LIME PIE
1 (4-serving size) package JELL-O Lime Flavor Gelatin
2/3 cup boiling water
1/2 teaspoon grated lime peel (optional)
3 tablespoons fresh squeezed lime juice
1/2 cup cold water
Ice cubes
1 (8 oz.) tub Cool Whip, thawed (plus additional for garnish)
1 (6 oz.) prepared graham cracker crumb crust or chocolate crumb crust
Lime slices, cut into quarters (optional, for garnish)
Dissolve gelatin completely in 2/3 cup boiling water in large bowl. Stir in lime peel and juice.
Mix 1/2 cup cold water and ice to make 1 1/4 cups. Add to gelatin, stirring until ice is melted.
Stir in Cool Whip with wire whisk until smooth. Refrigerate 10 to 15 minutes or until mixture is very thick and will mound.
Spoon into crust. Refrigerate 2 hours or until firm.
Garnish with additional whipped topping and lime slices. Store leftover pie in refrigerator.
