Recipe(tried): Chicken Breasts w/Oregano, Honey & Lime

Good Morning Everyone!

It is a sunny and beautiful morning here...tonight I will be making a simple and quick dinner, the marinade for the chicken only takes 30 minutes. The beans come out of can and you season them...

The menu is:
Chicken Breasts w/Oregano, Honey and Lime
Candied Sweet Potatoes w/Sherry
Italian Green Beans

Chicken Breasts w/Oregano, Honey & Lime
serves 4

4 boneless chicken breasts
2 garlic cloves, pressed
1 1/2 t. oregano
1/8 t. crushed red pepper flakes
1/2 t. salt
1/4 t. black pepper
1 T. honey
juice of 1 lime
1 T. olive oil
1 T. worcestershire sauce

Mix together garlic, oregano, hot pepper flakes, salt, honey and lime juice. Coat chicken with this mixture, cover and let sit for about 30 minutes.

Place chicken breasts on baking tray, drizzle olive oil over them and worcestershire sauce. Roast for about 15 minutes or til done.Candied Sweet Potatoes with Sherry

serves 5
can be easily doubled

3 large sweet potatoes (2lbs.)
1 oranges
half of a small can of pineapple tidbits, drained
1/2 c. melted butter
3/4 c. sugar
1/4 c. orange juice
1/4 c. cream sherry
1 cinnamon stick
1 t. vanilla

Peel and slice raw potatoes. Slice orange into thin slices. Layer potatoes, orange slices and pineapple tidbits in a greased casserole dish. Combine the butter, sugar, orange juice, pineapple juice, sherry and cinnamon stick. Add vanilla and stir well. Bring to a boil. Pour over potatoes, bake at 350 for 1 1/2 hours.Italian Green Beans

2 cans The Allens Sunshine Brand Cut Italian Green Beans
1 slice onion, chopped
1 slice red bell pepper, chopped
1/2 garlic clove minced
salt and pepper to taste

Put all ingredients in a saucepot and heat over med. until done, about 25 mts.
