Recipe(tried): Glazed Sweet Potatos

Hi there Gina,
So pleased to hear you,re getting back to normal.The yellow you,ve chosen sounds lovely,a happy cheerful colour.My weekend went well did very well in the race it was great fun with lots of activities and entertainment put on afterwards so I was dead tired when I got home!Fortuneately the family barbecued so I had a day off from the kitchen!Here is the recipe I promised you its really Yummy!.........

GLAZED SWEET POTATOES
*************************

3 medium-sized sweet potatoes
1 tbsp butter
3 tbsp soft brown sugar
1 tsp grated orange peel
juice of 1 orange
1/2 tsp freshly grated nutmeg
2 cinnamon sticks

(Serves 4)

Slice peeled sweet potatoes into rounds. Place in a saucepan with a little boiling water to just cover. Simmer until tender about 30 minutes. Remove and drain.
Place slices in an ovenproof dish. Add bits of butter, sugar, grated orange peel and juice. Sprinkle with nutmeg and add cinnamon sticks.
Bake at 200 C(400f) for a further 20 minutes.
