Recipe: Chicken Fajitas

Chicken Fajitas

1/3 cup olive oil
1/3 cup orange juice
1/3 cup fresh lime juice
2 tsp. soy sauce
1 tsp. dried oregano or marjoram
1/4 tsp. freshly ground pepper or more
1/2 tsp. ground cumin
1/2 tsp. chili powder
3-4 cloves garlic, crushed
1/4 cup fresh cilantro, minced
2 lbs. boneless chicken breast (or thighs)

Place chicken in a glass pan or ziploc bag. Top with all marinade ingredients. Cover and
chill 8 hours or overnight. Cook meat on the grill on a cast iron grill pan on the stovetop.
After meat is cooked allow to stand 10 minutes, then slice into strips.

Also grill strips of red and green bell pepper, and a large red onion, all cut 1” thick.
Assemble fajitas on warmed SOFT flour tortillas, top with guacamole, fresh salsa,
shredded lettuce, cheddar and/or Monterey jack cheeses, and sour cream.
