1 package macaroni -- (8-ounce)
4 tablespoons butter
3/4 cup fresh bread crumbs
1 small onion -- chopped
1 tablespoon all-purpose flour
1 teaspoon salt
1/4 teaspoon dry mustard
pepper -- to taste
1 1/2 cups milk
2 cups shredded cheddar cheese
Cook macaroni according to directions on package. Preheat oven to 350 degrees. Grease 2-quart casserole. In small sauce-pan over medium heat, melt 2 tablespoons butter, add bread crumbs and toss to coat. Set aside.
In medium saucepan over medium heat, melt remaining butter. Add onion and cook until tender, about 5 minutes. Stir in flour, salt, mustard and pepper until blended. Slowly stir in milk. Stir constantly, until smooth. Remove from heat and stir in cheese until melted.
Place drained macaroni in casserole. Pour cheese mixture over macaroni. Sprinkle reserved crumb mixture over top.
Bake 20 minutes or until bubbling.
Serves six as a side dish.
