Chicken in a Pot
Yield: 4 Servings
3 cups Chicken broth
2 1/2 lb Chicken pieces; with giblets
1/2 cup Diced carrots
1 cup Sliced leeks; white part only
1 lg Onion; sliced into rings
2 1/4 cups Sauerkraut; drained
1 Bay leaf
4 Juniper berries
1 3/4 cups Chopped skinned tomatoes
1/2 tsp Salt
1/2 tsp Pepper
Bring broth to a boil in a large heavy pot. Add chicken pieces and heart; reduce heat to low, andcook, uncovered, 30 minutes. Skim as needed. Add carrots, leeks, onion, sauerkraut, bay leaf, juniper berries and chicken liver to broth. Cover and simmer 30 minutes. Add tomatoes to pot 10 minutes before end of cooking time. Season well with salt and pepper and serve.
