Chicken Meatball Appetizers

2 1/2 cups minced cooked chicken breast
3 Tablespoons finely chopped onion
3 Tablspoons finely chopped celery
2 Tablespoons finely chopped carrot
2 Tablespoons dry white bread crumbs
1 eeg white
1/2 teaspoon poultry seasoning
pinch pepper

Preheat oven to 400 degrees F.

In a bowl, mix all ingredients together well. Shape into 3/4-inch balls; place on a baking sheet that has been coated with non-stick cooking spray.

Bake for 8-10 minutes or until lightly browned.

Makes 2 1/2 dozen meatballs.
