Chicken Salad for Sandwiches
(this is my favorite mix for filling canapes.)

2 hard cooked eggs
1 small onion chopped
1/2 green or red bell pepper, cored & seeds removed, chopped
1 1/4 cups cooked, boned, skinned chicken
1/3 cup mayonnaise
1 tbsp chili sauce
1 tbsp sweet pickle relish
1/2 tsp Worcestershire sauce

Combine eggs, onion, pepper and chicken in food processor (do not over process). Add remaining ingredients and blend with on & off turns.

Smoked Meat Canapes with Hazelnut Butter

1/2 cup hazelnuts
6 tbsp butter
12 thin square slices firm whole-grain or pumpernickel bread
6 ounces thinly sliced smoked or cured chicken, turkey or ham
fresh parsley
pitted olive slices

Preheat oven to 350 F. Toast nuts in shallow pan 15 minutes. Transfer to coarse sieve & rub nuts around until skin come off. Cool. Blend nuts & butter in food processor. Add pepper & refrigerate several hours or overnight. Spread slices of bread generously with nut butter. Top with sliced meat. Trim edges & cut each slice in thirds. Garnish with parsley & sliced olives.

Olive Cream
Puree in blender or small food processor:

1 can black olives, pitted and drained
1/2 red onion, chopped
1/2 cup cream cheese (you could add up to a cup)
1/4 teaspoon black pepper
1/2 clove raw garlic, chopped or 2 cloves roasted garlic
1 teaspoon balsamic vinegar

Taste and adjust seasoning, adding sea salt if you so desire.

Green Pepper Sandwich Filling
Saute in a little butter over medium high heat until tender

1/2 medium onion, chopped
1 green pepper, chopped
Reduce heat to low and add:

3/4 cup firm tofu, squeezed through your fingers into the saucepan (so that it's roughly mashed)
1 egg yolk
1/8 teaspoon sea salt
1/4 teaspoon pepper
1/4 teaspoon crushed red pepper

Stir occasionally until tofu is lightly browned. Spoon tofu mixture onto rolls.

4 whole grain sandwich rolls cut almost in half, or whole wheat pita

Carrot Sandwich Spread

1 (8 oz.) cream cheese, softened
1 stick margarine, softened
4 carrots, grated very fine (about 3/4 c.)
2 T. grated onion
2 T. minced green olives with pimento
Dash of white pepper

Mix all together and chill. This is best on thinly sliced pumpernickel bread. I like Pepperidge Farm. It makes such pretty tea sandwiches. People always think it's pimento cheese. I sometimes add a little minced celery.
