Recipe: Chicken Tabbouleh Salad (using couscous)

CHICKEN TABBOULEH SALAD

1 cup chicken broth
1 pound boneless, skinless chicken breasts, cut into 1/2-inch pieces
1/2 cup uncooked couscous
1/2 cup chopped fresh parsley
1/4 cup lime juice
2 tablespoons chopped fresh mint leaves
2 tablespoons vegetable oil
1/2 teaspoon salt
1 small cucumber, chopped (1 cup)
1 medium onion, finely chopped (1/2 cup)
1 small tomato, chopped (1/2 cup)

Heat broth to boiling in 2-quart saucepan. Stir in chicken. Cook over medium heat 10 to 15 minutes or until chicken is no longer pink in center.

Stir in couscous; remove from heat. Cover and let stand 5 to 10 minutes or until liquid is absorbed.

Mix chicken mixture and remaining ingredients in large glass or plastic bowl. Cover and refrigerate 1 hour to blend flavors.

Makes 4 servings
