Recipe: Chicken-Yogurt Bits (mini patties using cooked chicken, Prevention 1985)

"These are especially easy to make if you have a food processor. Serve atop whole-grain crackers with a dollop of mustard-ot horseradish-spiced yogurt."
1/2 cup roasted cashews
1/2 cup seasoned bread crumbs
3 1/2 cups cubed cooked chicken
2 medium carrots, shredded
3/4 cup low-fat yogurt
2 teaspoons Worcestershire sauce
2 teaspoons Dijon mustard
1/2 teaspoon dried thyme or tarragon
In food processor, grind the cashews to a powder. Transfer to a small bowl, mix with the bread crumbs, and set aside.
In the food processor, combine the chicken, carrots, yogurt, Worcestershire, mustard and thyme or tarragon. Process until well mixed and chicken is finely ground.
Form into patties that are about 1 1/2 inches in diameter. Coat patties on both sides with cashew mixture. Arrange on a no-stick-spray-coated cookie sheet.
Bake at 400 degrees F for 20 to 25 minutes, or until lightly browned.
Makes about 30 mini patties
