CHINESE COLD SESAME NOODLES, YUNNAN STYLE
1/2 pound Chinese noodles or spaghetti, cooked
1 Tablespoon sesame oil
FOR THE SAUCE:
2 Tablespoons soy sauce
1 1/2 Tablespoons Chinese chili sauce
1 1/2 Tablespoons sesame paste (or peanut butter mixed with 2 Tablespoons chicken broth)
1 Tablespoon sherry
1/2 Tablespoon sugar
2 sprigs scallion, chopped
3 cloves chopped garlic
1 Tablespoon chopped fresh cilantro (plus additional for garnish)
1 slice fresh ginger, chopped
Salt and pepper (to taste)
FOR SERVING (OPTIONAL):
shredded cooked chicken and julienned cucumber
Toss cold cooked noodles with 1 Tablespoon of sesame oil.
TO MAKE THE SAUCE:
Mix all ingredients for the sauce together. Add to noodles and toss well. Garnish with more chopped cilantro. If desired, place shredded cooked chicken and julienned cucumber on top.
