BROCCOLI RABE WITH LEMON BUTTER
2 bunches (about 1 1/4 pounds) broccoli rabe*
1 tablespoon olive oil
3 tablespoons butter or margarine, divided use
1 green onion, thinly sliced
2 tablespoons lemon juice
salt and freshly ground pepper
Wash broccoli rabe under cold running water and shake off excess water.
In large skillet over medium heat, heat oil and 2 tablespoons butter. Add broccoli rabe, cover and steam in hot butter 5 minutes.
Stir, add onion, cover and cook 2 minutes longer. With slotted spoon, place vegetables on serving platter, leaving drippings in pan.
Add remaining 1 tablespoon butter to pan, stirring until melted. Stir in lemon juice. Season to taste. Pour drippings over hot broccoli rabe.
*Broccoli rabe is also called rapini. Swiss chard or kale are also good cooked in this manner.
