CHOCOLATE BUNDT CAKE

Amount Measure Ingredient -- Preparation Method

1/2 c cocoa powder
1/2 c boiling water
2 1/4 c flour
1 3/4 c sugar
1 1/3 c buttermilk
2/3 c shortening or margarine
2 eggs, lightly beaten
1 1/2 tsp baking soda
1 tsp vanilla
1/2 tsp salt
1/2 c mini chocolate chips (optional)
Preheat oven to 350 deg. GREASE AND FLOUR bundt pan; set aside. Stir cocoa and water together until smooth, set aside. In a large mixer bowl, combine the next 8 ingredients with an electric mixer. Beat on low, then on mediun until smooth. Add cocoa mixture. Beat at low speed until combined. Stir in choc. chips. Pour into prepared pan. Bake for 50 min or until a toothpick, when inserted, comes out clean.
Tastes wonderful as is, or to 'fancy it up' use a chocolate butter icing that isn't too thick, then drizzle with melted white chocolate. Put melted chocolate into plastic bag, making a tiny hole in one corner, and squeeze choc. over icing.
