CHOCOLATE CHEESECAKE MUFFINS
These are wonderful and everyone fights over them.
1 (8 oz) pkg cream cheese, softened
6 tablespoons and 1 1/2 cups sugar, divided use
3 cup flour
1 1/2 cups sugar
8 tablespoons unsweetened cocoa powder
1 1/2 teaspoons salt
3 eggs, beaten
2 1/4 cups milk
1 cup vegetable oil
Confectioner's sugar for decoration
In small bowl, beat cream cheese and 6 Tbsp sugar until fluffy. Set aside.
In larger bowl, combine flour, remaining 1 1/2 cups sugar, cocoa powder and salt, mixing well. Set aside.
In 3rd bowl mix eggs, milk and oil and beat well. Make well in dry ingredients and add liquids, mixing only until combined. Batter should be lumpy.
Spoon 3 Tbsp of chocolate batter into greased muffin tins, then a teaspoon of cream cheese mixture, then more chocolate batter until filled just below the rim (these do not rise much so don't worry).
Bake at 375 degrees F for approximately 20 minutes until tops no longer have shiny look to them. Let stand in muffin tins for a few minutes to cool before removing.
Dust with confectioners sugar. Enjoy - these are great for a snack.
