Recipe: Rice Muffins (using cooked rice, honey, cinnamon and raisins, 1980's)

RICE MUFFINS


2 cups flour
1 tablespoon baking powder
1/2 teaspoon ground cinnamon
1 egg, beaten
1/3 cup butter, melted
1 cup milk
1/2 cup honey
1 cup cooked rice
2/3 cup raisins

Preheat your oven to 400 degrees F.

Sift flour, baking powder and cinnamon together. Stir in your egg, butter and milk, just till moistened.

Pour the honey over the rice and raisins, then fold into your batter. Fill 12 paper-lined or Pam sprayed muffin tins full,

Bake at 400 degrees F for approximately 20 minutes.

Makes 12 muffins
