SLOW COOKER PORK CHALUPAS
2 pound pork tenderloin, cut into 1-inch pieces (4 cups)
2 cans (15 to 16 ounces each) red kidney beans, rinsed and drained
1 (8 ounce) can tomato sauce
1/4 cup canned chopped green chiles
4 large cloves garlic, minced
2 tablespoons white vinegar
5 teaspoons chili powder
5 teaspoons ground cumin
2 teaspoons dried oregano leaves
1 teaspoon salt
1/2 teaspoon coarse black pepper
FOR SERVING:
4 flour tortillas (6 to 8-inches in diameter)
Condiments: Sour cream, chopped onion, chopped tomatoes, shredded Cheddar cheese
MENU: Rice and tossed salad with salad dressing
Spray slow cooker and underside of lid with nonstick cooking spray. Place pork in slow cooker.
Mix remaining ingredients together, except tortillas; pour mixture over pork. Do not stir.
Cover crock pot and cook on LOW setting 8 to 9 hours. Do not remove lid during cooking.
TO SERVE:
Place a tortilla on 4 individual serving plates. Spoon pork mixture over tortillas. Top with desired condiments.
