08-11-2000 - 10 Recipes Using Chocolate Chips
Carolyn-NJ (08:06:37) : Even though this is from a boxed cake mix, it is one of my favorite chocolate cake recipes. Beware, though, that you'd better be a chocoholic - it is very, very rich. But I sure hope I can still whip one up once I get to heaven!
SUPREME SOUR CREAM CHOCOLATE CHIP CAKE
1 box Duncan Hines Devil's Food Cake Mix
1 small box instant chocolate pudding
4 eggs
cup oil
1 cup water
1/2 to 3/4 pint sour cream
6-oz. bag chocolate chips (semi-sweet)
Mix all ingredients except the chocolate chips until smooth and creamy. Fold in chocolate chips. Pour into a well-greased and floured Bundt or tube pan. Bake at 350 for 55-60 minutes. Remove and let cool. Refrigerate if keeping more than a day or two (it won't last that long).
I have served this plain with whipped cream or vanilla ice cream but often I add still more chocolate by making the following glaze to drizzle over the top:
CHOCOLATE GLAZE
2 tablespoons butter or margarine
2 tablespoons Hershey's Cocoa (not instant)
2 tablespoons water
1 teaspoon light corn syrup
1 cup confectioners' sugar, sifted
1/2 teaspoon vanilla
Melt butter in small saucepan over low heat; add cocoa and water, stirring constantly, until mixture thickens. Add corn syrup. Do not boil. Remove from heat; blend in confectioners' sugar and vanilla. About 1/2 cup glaze. Immediately drizzle over bundt cake.
Note: My hubby likes to pop a slice in the microwave just a few seconds to re-melt the chocolate chips.

WORLD'S GREATEST COOKIES
1 cup oatmeal
1 cup corn flakes
3 1/2 c. flour
1 tsp baking soda
2 sticks soft butter
1 c. packed brown sugar
1 c. granulated sugar
1 large egg
1 cup vegetable oil
1 tsp vanilla
1 cup chopped pecans or walnuts
1 cup butterscotch chips
1 cup HEATH almond brickle chips
In blender process oats and corn flakes to a fine texture.
Set aside.
Combine flour, baking soda, and salt and set aside.
Preheat oven to 350 degrees.
In mixing bowl, cream butter and both sugar until light and fluffy, then
add egg, oil and vanilla and mix well.
Add the oat mixture and the flour mixture and stir until the batter is
smooth.
Add nuts, butterscotch chips, and almond brickle bits.
Drop by tablespoons onto an ungreased cookie sheet.
Make a crisscross design on top with a fork.
Bake until cookies are slightly browned around the edges. About 15 minutes. Store in an airtight container. This makes a large batch of cookies.
I baked them on parchment paper as I do all of my cookies.
The original recipe called for one cup of coconut and as I did not have it - I substituted the butterscotch chips and brickle bits. My DH said they were the best cookies I ever made. I tend to agree.
You could substitute chocolate chips for butterscotch!

Secret Ingredient Chocolate Chip Cookies!
These are our favorite chocolate chip cookies!
1 1/2 c. flour
1 tsp soda
1/2 tsp salt
1 1/2 c. rolled oats
2 sticks oleo-softened
3/4 c. granulated sugar
1/2 c. brown sugar
1/4 c. nestles quick powder
2 large eggs
1 tsp vanilla
1 small pkg chocolate chips 8 oz
Mix all dry ingredients together. Beat together oleo, sugars, eggs, and vanilla. Add nestles quick. Mix in dry
ingredients. Add
chocolate chips.
Preheat oven to 350. Drop rounded tablespoons of dough onto greased cookie sheets. Bake 12 to 15 minutes until
golden.
Makes 30 cookies
I bake all of my cookies on parchment paper. You never have a burned cookie and the cookie sheets are a zip to
wash!!!!!

White Chocolate Macadamia Biscotti
1/2 cup butter
3/4 cup sugar
2 eggs
1 teaspoon vanilla
2 tablespoons Amaretto
2 cups plus 2 tablespoons unbleached or all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
2/3 cup macadamia nuts
2/3 cup white chocolate chips
In a mixing bowl, cream butter and sugar until light and fluffy. Beat in eggs, vanilla and liqueur. In a bowl, combine the flour, baking powder and salt. Add to the creamed mixture, mixing until blended. Fold in nuts and chocolate chips.
Divide dough in half. On a greased and floured baking sheet, pat out into two logs about 1/2-inch high, 1 1/2-inches wide, and 14-inches long, spacing them at least 2 inches apart. Bake in the middle of a preheated 325-degree oven for 25 minutes or until lightly browned. Transfer from baking sheet to a rack. Let cool for 5 minutes.
Place on a cutting board. With a serrated knife, slice diagonally on a 45-degree angle about 1/2" thick. Place the slices upright on the baking sheet and return to the oven for about 8 minutes longer to dry slightly. Let cool on a rack. Store in tightly covered container.
Makes about 3 1/3 to dozen biscotti

CHOCOLATE CHIP GRAPE NUT BREAD
Yield: 2 loaves
1 c Grape nuts
2 c Buttermilk (low fat 1.5%)
2 c Sugar
2 Eggs or 1/2c egg substitute
1/2 ts Salt
3 1/2 c Flour
1 ts Baking soda
2 ts Baking powder
1/2 c Chocolate chips
1 ts Vanilla
Soak Grape-Nuts in buttermilk for 10 minutes. Beat sugar and eggs or
substitute together in a large bowl. Add milk/Grape-Nuts mixture and
vanilla. Sift flour with salt, soda and powder and stir thoroughly
into the Grape-Nuts mixture. Add chocolate chips and mix well. Pour
into 2 non-stick sprayed 9 x 5 loaf pans and bake at 350F for about
45 minutes, or until a toothpick comes out clean. Makes 2 loaves, or
about 20 servings.

BREAD MACHINE BANANA CHOCOLATE CHIP BREAD
1 LB LOAF
1/3 cup milk
1/3 cup mashed very ripe banana
1 large egg
1 tbsp butter or margarine
3/4 tsp salt
2 cups bread flour
1/4 cup chocolate chips
1 1/2 tsp Bread machine yeast
1.5 LB LOAF
1/2 cup cup milk
1/2 cup mashed very ripe banana
1 large egg
1 tbsp butter or margarine
1 tsp salt
3 cups bread flour
1/3 cup chocolate chips
2 tsp Bread machine yeast
Use the 1 pound recipe if your machine pan holds 10 cups or less of water. Add ingredients to bread machine pan in the order suggested by manufacturer, adding mashed bananas with milk, and chocolate chips with flour. Recommended cycle: Basic/white bread cycle, light or medium/normal color setting. (Can use more chocolate chips and put them in at the fruit/nut signal on your machine.)

1 tsp baking soda
2 tsp vanilla
1/2 tsp baking powder

Heat oven to 325 F
Grease two loaf size pans, or use cooking spray. Mix bananas, sugar, oil & eggs. Add remaining ingredients & mix well. Pour into pans 2/3 full & bake for 1 hour, or until done. Cool before slicing.

(A VERY rich chocolate and walnut pie. Milk or mini chocolate chips may be used instead of semisweet chips. Be sure to cool the pie shell before filling. )
3/4 cup packed light brown sugar
1/2 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon ground cinnamon
2 eggs, lightly beaten
1 cup semi-sweet chocolate chips
1 cup coarsely chopped walnuts
1 (9 inch) pie shell, baked
1/2 cup cold whipping cream
1 tablespoon confectioners' sugar
1/4 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1 pinch ground nutmeg
Preheat oven to 350 degrees F (175 degrees C).
In a bowl, stir together brown sugar, flour, baking powder, and 1/4 teaspoon cinnamon. Add eggs, stir until blended.
Stir in chocolate chips and walnuts. Pour into baked pie
crust.
Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes until lightly browned and set. Serve slightly warm
or at room temperature with spiced cream.
To Make Spiced Cream: Mix together whipping cream, confectioners' sugar, vanilla, 1/4 teaspoon cinnamon, and
nutmeg.
Makes 1 -9-inch pie

TRIPLE CHOCOLATE CHIP COOKIES
1 box chocolate cake mix (2 layer size)
1 cup sour cream
1 box instant chocolate pudding (4 serving size)
1 cup chocolate chips
2 large eggs
Turn the oven on to 350 degrees (175 deg. C).
Grease the cookie sheet. Combine all five ingredients in the bowl. Stir until moistened and no big lumps remain. Drop by rounded spoonfuls, about 2 inchs (5cm) apart, on to the cookie sheet. Bake on the center rack in the oven for 16 - 18 minutes. Use the oven mitts to remove the cookie sheet. Let stand 2 minutes. Cool completely. Makes about 4 dozen.

2 1/4 cup unbleached all purpose flour
1 tsp. baking soda
1 tsp. salt
1 cup butter or margarine (2 sticks)
3/4 cup packed brown sugar
3/4 cup granulated sugar
1 1/2 tsp. vanilla extract
2 eggs
1 cup chopped nut (walnuts or pecans)
1 1/2 cups semi sweet chocolate chips
1/2 cup white chocolate chips
1/2 cup butter brickle pieces
1/2 cup butterscotch chips or peanut butter pieces
In a small bowl combine flour, baking soda, and salt.
In a large bowl beat butter, granulated and brown sugars, vanilla extract and eggs (adding one at a time and beating well.) Gradually beat the flour mixture into the large bowl.
Stir in the rest of the ingredients; nuts, both kinds of chocolate chips, brickle pieces and butterscotch chips.
Drop by rounded teaspoon onto ungreased pan. Bake in preheated oven at 375 degrees for 10 minutes. Let stand 2 minutes, and remove to cooling rack.
