Recipe: Chocolate Jumbles (2) (cookies with molasses, cocoa, and spices)

1 cup sugar
1 cup shortening
1 cup cold coffee
1 cup molasses
1 cup cocoa
2 eggs
2 tsp. baking soda
1 tsp. cinnamon
1 tsp. ground cloves
1/2 tsp. nutmeg
1/4 tsp. ginger
5 to 6 cups flour
Preheat oven to 325 degrees F. Grease cookie sheets.
Beat sugar and shortening well. Add all other ingredients except flour. Mix well. Add flour gradually. Roll dough and cut. Place on prepared cookie sheets. You can also drop these by tablespoon and press down with bottom of floured glass bottom.
Bake in 325 degree oven for 8 to 10 minutes or until cookie springs back when touched lightly with finger.
Cool and frost.

Makes 5 dozen cookies
1 cup shortening
1 cup sugar
1 egg, beaten
1/2 cup molasses
1 cup warm coffee
1 1/2 tsp. baking soda
3 cups flour
3/4 cup cocoa
1 tsp. cinnamon
1 tsp. cloves

Cream together shortening, sugar, egg and molasses. Add soda to coffee. Combine flour, cocoa, cinnamon, and cloves. Add to creamed mixture alternately with coffee mixture. Drop on prepared cookie sheets.
Bake at 350 degrees for 12 minutes.
