CHOCOLATE LOVERS FAVORITE CAKE WITH FUDGE ICING
FOR THE CAKE:
1 cup flour
1 tsp. baking powder
Pinch of salt
1 stick (1/2 cup) margarine, softened
1 cup sugar
4 eggs
1 (16 oz.) can Hershey's chocolate syrup
1 tsp. vanilla extract
FOR THE FUDGE ICING:
1 cup sugar
2 sticks (1 cup) butter (not margarine)
1/2 cup chocolate chips
1/3 cup evaporated milk
1/2 tsp. vanilla extract
TO PREPARE THE CAKE:
Preheat oven to 350 degrees F. Grease and flour a 13x9x2 1/2-inch pan.
Sift flour, baking powder and salt together.
In a large bowl, cream margarine, adding sugar gradually. Add eggs, one at a time. Alternate adding dry ingredients and chocolate syrup. Beat until well mixed. Add vanilla. Pour into prepared pan.
Bake at 350 degrees for 30 minutes.
TO PREPARE THE FUDGE ICING:
Put all the icing ingredients except vanilla in a heavy saucepan. Blend over medium heat, stirring constantly, until mixture begins to boil. Boil 3 minutes by the clock. Remove from heat and add vanilla.
Beat icing with a spoon until it cools and thickens. Placing saucepan in sink with a few inches of cold water will cool it faster.
Spread icing quickly on cake. Cut into squares when cool. Store in an airtight container.
