CHOCOLATE MOCHA COOKIES WITH MOCHA FROSTING
FOR THE COOKIES:
1/2 cup margarine
2 ounces unsweetened chocolate
1 cup brown sugar, packed
1/2 cup buttermilk
1 large egg
1 teaspoon vanilla
1 1/2 cups flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup semi-sweet chocolate chips
1/2 cup chopped walnuts
FOR THE FROSTING:
2 1/2 cups powdered sugar
1/4 cup margarine, softened
2 tablespoons cocoa
2 teaspoons instant coffee
dash salt
1/4 cup milk (as needed)
Preheat oven to 375 degrees F. Lightly grease cookie sheets.
TO MAKE THE COOKIES:
Melt margarine and chocolate together. Cool. 10 minutes.
Add brown sugar to chocolate mixture. Stir in buttermilk, egg, and vanilla. Mix in flour, baking powder, baking soda, and salt. Stir in chocolate chips and nuts. Drop by spoonfuls onto prepared cookie sheets.
Bake 375 degrees F for 8-10 minutes. Remove from sheets to wire rack and cool completely before frosting.
TO MAKE THE FROSTING:
Blend frosting ingredients together adding milk last and using only enough to make frosting spreadable.
Makes about 40
