Recipe: Tuscan Garden Pasta Salad (using cooked chicken, quantity recipe, 50 servings)

TUSCAN GARDEN PASTA SALAD

11 cups dried penne pasta
3 pounds gourmet salad greens
7 cups cooked cubed chicken
5 cups roasted red and yellow bell pepper strips
1 (#10/102 ounce) can Contadina Whole Tomatoes and Juice, drained and cut up
2 cups sliced pitted ripe olives (optional)
3 cups Italian vinaigrette dressing
1 3/4 cups (7 ounces) grated Parmesan cheese

Cook pasta according to package directions; drain.

In large bowl, combine salad greens, chicken, bell peppers, tomatoes and olives, if using.

Toss with vinaigrette dressing to coat well. Sprinkle with Parmesan before serving.

Makes about 50 servings
