"The Ultimate Sin" Chocolate Cake

=== BOTTOM LAYER ===
4 Eggs -- room temperature
2 tablespoons Sugar
12 ounces Semi-sweet chocolate chips
6 ounces Butter - (1 1/2 sticks)
=== TOP LAYER ===
1 1/2 cups 2% milk
1 1/2 cups Semi-sweet chocolate chips
12 ounces Butter - (3 sticks)
3 teaspoons Irish cream liquor
1 1/2 teaspoons Vanilla
12 Egg yolks
Whipped cream -- for garnish

Bottom Layer Preparation: Melt chocolate and butter in microwave for two minutes or until smooth, stirring occasionally. Allow to cool. Whisk eggs and sugar in a mixing bowl, then place this bowl inside of another bowl filled with hot water and stir ingredients until warm. Beat egg and sugar mixture until triple in volume. Gently fold in chocolate and butter. Pour into a paper lined and greased 10-inch cake pan. Bake at 425 degrees for 10 minutes or until the cake barely resists pressure from touch. Cool for 10 minutes and turn onto a serving plate.
Top Layer Preparation: Preheat oven to 350 degrees. Heat milk in a saucepan until hot. Add chocolate and stir until melted. Stir in butter, liquor and vanilla. Remove from heat and whisk a small amount of chocolate mixture in with egg yolks. Pour yolk mixture back into saucepan and mix. Pour in a lined and greased pan, and bake 20 to 30 minutes or until barely set. Cool completely then turn over on top of the bottom layer.
Garnish cake with whipped cream.

Chocolate Cream Cheese Pie

1 German chocolate square
1/3 cup milk
3 ounces cream cheese
3 tablespoons sugar
1 carton cool whip

Melt chocolate bar in milk over low heat. Cream together cream cheese and
sugar. Add chocolate, then cool whip. Mix well. Put into pie crust. Freeze.Sara,MN (11:20:52) : Mississippi Mud Cake

1 cup butter
1/2 cup cocoa
2 cup sugar
4 eggs, slightly beaten
1 1/2 cup flour
Pinch of salt
one cup coconut
1 1/2 cup nuts
1 Tbsp vanilla
jar of marshmallow cream

Melt butter and cocoa together, remove from heat. Stir in sugar and
eggs and mix well. Add flour, salt, nuts, coconut and vanilla. Mix
well. Bake in 13x9x2 inch pan at 350 degrees for 35 to 45 minutes
(check with the toothpick method). Remove from oven, spoon marshmallow
cream over the cake while still very hot.

Icing
1/2 cup butter
1/3 cup cocoa
1 Tbsp vanilla
1 lb powdered sugar
1/4 cup milk, more if needed for easy spreading. (I use evaporated milk)

Melt butter and cocoa together, add the rest of the ingredients. Spread
over marshmallow layer. Swirl into marshmallow cream to resemble mud.Terrytx (10:12:12) :

2 small pkgs. vanilla instant pudding
3 cups cold milk
1 (12 oz.) tub cool whip
1 box graham crackers
1 container chocolate frosting

Whip pudding and milk until thickened.
Fold in cool whip.
Cover bottom of 13x9 pan with 2 layers of crackers.
Place 1/2 of cool whip mixture on top.
Repeat layers, ending with a single layer of graham crackers.
Place frosting in microwaveable container and heat on high in microwave for 1 minute.
Pour frosting over top of dish.
Refrigerate for minimum of 4 hours (best if overnight).

Milky Way Ice Cream
My adapted recipe: Milky Way Ice Cream

4 (2.05 oz) Milky Way candy bars, freeze 2
1 (1.4 oz) box fat-free sugar-free Jello chocolate pudding mix
1 (14 oz) can Chocolate Eagle Brand condensed milk
1/2 tbsp. vanilla
1 qt. fat-free half-and-half

Melt 2 candy bars in a pan over low heat adding about 1/2 cup of milk, until well blended.
Combine all ingredients and freeze according to manufacturer's directions.
During the last 5 min. of freezing ( or by directions) crush the frozen candy bars and add to the machine.
Yield: 1 1/2 quarts

Kahlua Chocolate Cake

1 (18.25 ounce) box dark chocolate cake mix
4 eggs
1 cup sour cream
1 cup Kahlua (coffee liqueur)
3/4 cup vegetable oil
1 cup semisweet chocolate chips
1 (1 pound) can chocolate frosting
1 1/2 tablespoons Kahlua (coffee liqueur)

1 In a large bowl, combine cake mix, eggs, sour cream, 1 cup coffee liqueur, and vegetable oil. Using an electric mixer, beat at low speed to blend. Increase speed, and beat 3 to 5 minutes. Stir in the chocolate chips. Pour batter into greased and floured 10 inch bundt pan.

2 Bake at 350 degrees F (175 degrees C) for 55 to 60 minutes, or until tester inserted in center comes out clean. Cool cake in pan on rack for 30 minutes. Remove from pan, and cool completely.

3 Microwave frosting 15 to 25 seconds, just until soft. Stir with spoon, and add 1 1/2 tablespoons coffee liqueur. Stir well. Drizzle frosting over cooled cake. Makes 10 inch bundt cakeTerrytx (10:08:09) :

Easy Hot Fudge Sauce

3 tablespoons cocoa powder
1 cup sugar
1 (12 oz) can evaporated milk
1 tablespoon butter
1 teaspoon vanilla extract

Combine cocoa and sugar in small saucepan; stir in milk. Bring to a boil, stirring constantly. Remove from heat; ad butter and vanilla, stirring until butter melts. Serve warm over ice cream.

Chocolate Snowballs

1 cup butter
1/2 cup sugar
2 teaspoons vanilla
1 2/3 cups flour
3/4 teaspoon salt
1/2 cup cocoa
2 cups finely chopped nuts (I use pecans)

Cream butter, sugar and vanilla. Sift flour add salt, cocoa and nuts. Add to creamed ingred. Form into 1/2" balls. Place on ungreased cookie sheets. Bake 20 min. at 325 degrees. Cool then roll in powdered sugar.

NOTES : I have made these for years at Christmas time. Very good and not too sweet.Terrytx (10:06:21) :

Chocolate Chess Pie

1 1/2 cups sugar
3 T unsweetened cocoa powder
2 eggs, beaten
2/3 cup evaporated milk (I have used regular milk mixed with 1/3 cup powdered and it worked great!)
1/4 cup margarine or butter, melted
1 t pure vanilla
Dash salt
1 9-inch pie crust (may be unbaked, or bake for 5 minutes before filling - will be more tender and flaky that way).

Preheat oven to 325 F
In a medium mixing bowl combine the sugar and cocoa with a wire whisk. Add the eggs, milk, melted margarine, vanilla and salt. Carefully pour the mixture into the pie plate. Bake in the oven about 50 minutes or until puffy over the entire surface. Cool on a wire rack.
This pie needs to cool quite a bit before cutting so the custard can set more.
It is great at or a little above room temp with a little ice cream, or cold right out of the refrigerator (as my husband is often caught eating it). Terrytx (10:05:36) :

1 (18.25 oz.) package devil's food cake mix with pudding
1 (21 oz.) can cherry pie filling
2 large eggs
1 tsp. almond or vanilla extract

1 cup sugar
1/3 cup butter
1/3 cup milk
1 cup semisweet chocolate morsels

Combine first 4 ingredients in a bowl until blended. Pour into a greased and floured 9x13 pan.
Bake at 350o 25-30 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack.
Combine sugar, butter, and milk in a small saucepan. Bring to a boil, stirring constantly; reduce heat, and simmer, stirring constantly, 1 minute.
Remove from heat; stir in chocolate chips until melted. Pour over cake and let stand until set. SusanIL (09:45:49) :

Turtle Cake

1 package German chocolate cake mix
3/4 cup butter -- softened
1 package caramels -- 14 ounce
1/2 cup evaporated milk
1 cup pecans -- chopped
1 cup chocolate chips

Melt caramels with milk in top of a double boiler. Combine cake mix and butter according to directions on the box. Pour half of batter into a greased 9 x 13 inch pan. Bake at 350 for 10 minutes. Pour caramel milk mixture over baked layer. Top with nuts and chocolate chips. pour remainder of batter over all and bake at 350 for 25-30 minutes or until a toothpick comes out clean. Serve with ice cream.
