Recipe: Cinnamon-Apple Jelly (2)

I make cinnamon-apple jelly every year but I make it with cinnamon candy. But here are 2 recipes using cinnamon oil, as you requested.

Cinnamon-apple Jelly #1

3# tart apples
3 c. sugar
1 drop, oil of cinnamon
6 drops, red food coloring

Wash fruit, pare or core. Cut in eighths, removing blemishes. Barely cover with water, simmer until soft. Strain juice through jelly bag. Measure 4 cups juice into large pot. Add sugar, stir until dissolved. Bring to full boil over high heat. Boil hard until syrup sheets off spoon. Remove from heat, skim off foam quickly. Add cinnamon and coloring. Pour into hot jars. 5# tart apples
Sugar
2-3 drops, oil of cinnamon
2 drops, red food coloring

Wash fruit; do not pare or core. Cut in eighths, remove blemishes. Barely cover with water; simmer until soft. Strain thru a jelly bag. Measure the juice -- about 6 cups -- and heat to a boil. Skim and add 3/4 cups sugar for each cup of juice. Stir until sugar dissolves; cook about 15 minutes or until syrup sheets off spoon. Flavor with oil of cinnamon. Add red food coloring. Pour into hot, scalded glasses. Seal immediately. Makes about 6 -- 1/2-pint jars.
