Recipe: Cinnamon Apple Loaves (with walnuts and raisins)

CINNAMON APPLE LOAVES

3 cups flour
1 1/2 tsp. baking soda
1/2 tsp. baking powder
1 tsp. salt
2 1/2 cups sugar
2 1/2 tsp. cinnamon
2/3 cup raisins
1 cup chopped walnuts
3 cups apples, chopped and unpeeled
4 eggs
1 1/4 cups oil
1 1/2 tbsp. vanilla

Preheat oven to 325 degrees F. Grease bottoms only of 2 (9x5-inch) loaf pans.

In a large bowl, combine flour, baking soda, baking powder, salt, sugar, cinnamon, raisins, walnuts and apples; set aside.

In a medium bowl, whisk eggs, oil and vanilla until well blended. Add wet ingredients all at once to dry ingredients. Stir just until dry ingredients are absorbed. Divide batter among pans.

Bake for 1 hour. Cool in pans on a wire rack for 10 minutes before removing to cool completely.

Makes 2 loaves
