DATE AND NUT BREAD
3/4 cup boiling water
1 1/2 cups chopped dates
2 cups flour
1/2 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped nuts
1 cup milk
1/4 cup vegetable oil
1 egg
In a saucepan, combine boiling water and dates. Cook and stir over medium heat until thickened. Cool.
Preheat oven to 350 degrees. Grease a 9x5x3-inch loaf pan or 3 mini loaf pans.
Combine flour, sugar, baking powder, baking soda and salt. Stir in the chopped nuts.
Beat together milk, oil, and egg.
Add date mixture and milk mixture to dry ingredients and beat for about half a minute. Turn into prepared pan(s).
Bake for 65 to 70 minutes for loaf pan 40 to 45 minutes for mini pans.
Makes 1 large loaf or 3 mini loaves
