Recipe: Cinnamon Roll Dough Made With Potatoes (3)

Here are three recipes for you to try - the one using sweet potatoes looks interesting!

FAMOUS CINNAMON ROLLS
From: Cookbook USA CD

2 pkgs. dry yeast
1 tbsp. sugar
1/2 c. (115 degree) water
1 c. mashed potatoes
1 c. shortening
1 c. (115 degrees) potato water
2 eggs, beaten
1/4 c. sugar
1 tsp. salt
1 c. (115 degrees) water
7-8 c. all-purpose flour
Butter, melted
Cinnamon sugar
Raisins
Chopped nuts
1 recipe confectioners' sugar icing

Dissolve yeast and 1 tablespoon sugar in 1/2 cup water. Combine next 6 ingredients in bowl; mix well. Add yeast; mix well. Add remaining 1 cup water; mix well. Stir in flour. Knead on floured surface until smooth and elastic. Place in greased bowl, turning to grease surface. Let rise for 1 1/2 hours or until doubled in bulk. Divide into 3 portions. Roll each portion into 9"x13" rectangle. Spread with melted butter. Sprinkle with cinnamon sugar. Sprinkle with raisins and nuts; roll as for jelly roll. Cut into 1 1/2" thick slices. Place cut side up in 9"x13" baking pans. Let rise for 1 hour or until doubled in bulk. Preheat oven to 350 degrees. Bake for 20 to 25 minutes. Glaze with favorite confectioners' sugar icing. Yield: 40 rolls.


CINNAMON ROLLS
From: Cookbook USA CD

1 c. hot mashed potatoes
1 c. warm water (potato)
1 c. warm milk
7-10 c. flour
2 cakes yeast
1 c. soft butter
1 c. sugar
1 1/2 tsp. salt
4 lg. eggs
Soft butter
Brown sugar
Nuts

Combine potatoes, liquids and 1 cup flour. Beat until blended and let cool. Stir yeast into mix. Cover, let rise until light and foamy. When light, stir down with wooden spoon. Cream butter, sugar. Add salt and eggs and beat until blended. Stir into yeast. Mix with remaining flour using enough to make a firm dough. Knead, place in bowl, brush with butter and let rise again. When dough has risen, punch down and turn into floured board. Roll out - spread with soft butter and brown sugar, cinnamon and chopped nuts. Roll as a jelly roll and cut into 1 inch slices. Place slices just touching in buttered pans with sides. Let rise again. Bake in 375 oven for 20 minutes. Glaze.


Sweet Potato Cinnamon Rolls
From: Cookbook USA CD

DOUGH:
2 c. cooked mashed sweet potato
9 tbsp. melted margarine (1 stick & 1
tbsp.)
1/2 c. milk
2 1/2 c. all-purpose flour
1/4 c. sugar
5 tbsp. baking powder
1 tbsp. salt

FILLING:
6 tbsp. melted margarine
3/4 c. raisins
1 tbsp. cinnamon

GLAZE:
1 2/3 c. sifted powdered sugar
2 tbsp. milk
1/2 tsp. vanilla

For dough: Combine sweet potato, margarine and milk. Stir in dry ingredients, mixing until well blended. When soft dough forms, roll dough on floured surface into a 12 x 15 inch rectangle. Combine filling ingredients and sprinkle over dough. Roll dough lengthwise, pinching the seams together. Cut dough into 3/4 inch slices and place close together in greased baking pan. Bake until golden brown at 425 degrees for 15-20 minutes. While rolls are baking, combine glaze. When rolls are done, remove from the oven and immediately spoon the glaze over the rolls. Makes 20 rolls.
