CINNAMON-SUGAR BISCOTTI
2 cups flour
2 1/2 tsp ground cinnamon, divided use
1 tsp baking powder
1/4 tsp salt
1 cup plus 3 tbsp sugar, divided use
6 Tbsp butter, room temperature
1 large egg
1 egg yolk
1 tsp vanilla
1 egg, beaten (for brushing on top)
Preheat oven to 325 degrees F. Line baking sheet with parchment paper.
Mix flour, 1 1/2 teaspoons of the cinnamon, baking powder and salt in medium bowl; set aside.
Beat 1 cup sugar and butter in large bowl until fluffy. Add 1 egg and beat well. Beat in egg yolk and vanilla, then the flour mixture.
Transfer dough to work area and divide in half. Shape each into 9-inch long by 1 1/2-inch wide logs. Place logs on baking sheet 3-inches apart. Brush tops with beaten egg.
Bake 325 degrees F until golden and firm to touch, about 50 minutes. Cool on rack.
Using a serrated knife cut cooled logs into 1/2-inch wide diagonal slices. Place each cut side down on baking sheet.
Combine the remaining 1 teaspoon cinnamon and the remaining 3 tablespoons sugar and sprinkle on biscotti.
Bake at 325 degrees F for 20 minutes until golden. Cool on racks.
Makes about 40 cookies
