Recipe: Citrus Ice (using fruit juice concentrate, gelatin, and buttermilk)

CITRUS ICE

1 envelope unflavored gelatin
1/2 cup cold water
3/4 cup sugar
1 (6 ounce) can frozen fruit juice concentrate (grapefruit, orange or tangerine)
2 1/4 cups buttermilk

Sprinkle gelatin on cold water in saucepan to soften. Place over low heat, stirring constantly until gelatin is dissolved. Remove from heat. Add sugar and stir until dissolved.

Blend fruit juice concentrate with buttermilk. Stir in gelatin mixture; turn into freezing tray. When partially frozen, remove to bowl and beat until smooth.

Return to tray and freeze until firm.

Makes 1 1/4 quarts
