CLASSIC MUD PIE
FOR THE CRUST:
6 oz semi sweet chocolate chips, divided use
3 tbsp butter
1 1/4 cups chocolate wafer crumbs
FOR THE FUDGE SAUCE:
1 (6 oz) pkg semi sweet chocolate chips
1/2 cup heavy cream (whipping cream)
3 tbsp butter
1 tbsp coffee flavored liqueur
FOR THE FILLING:
1 quart coffee ice cream, softened
2 tbsp coffee flavored liqueur
FOR SERVING:
Whipped cream
TO MAKE THE CRUST:
Combine over hot (not boiling) water, 1/2 cup chocolate chips and 3 tablespoons butter, stir until chips are melted and mixture is smooth. Add chocolate wafer crumbs, stir until well blended. Press into a 9-inch pie pan. Chill until firm.
TO MAKE THE FUDGE SAUCE:
Combine over hot (not boiling) water remaining 1 1/2 cups chocolate chips, 1/2 cup heavy cream, and 3 tablespoons butter. Stir until chips are melted and mixture is smooth. Remove from heat, stir in coffee flavored liqueur. Chill 10 minutes, then spread 1/2 cup of the Fudge Sauce on bottom of chocolate cookie crust. Chill 15 minutes.
FOR THE FILLING:
In large bowl, combine ice cream and coffee flavored liqueur. Pour over Fudge Sauce layer in pie pan. Freeze several hours or until firm.
Serve with remaining Fudge Sauce that has been warmed, and whipped cream if used.
Makes 1 (9-inch) pie, 8 servings
